In the Kitchen at Eidolon: Fruity Chicken Salad

When ever I'm in the mood for a fresh sandwich I crave a chicken salad sandwich.  Over the years I've managed to perfect my recipe for delicious chicken salad.  I do not like mayonnaise at all, so I came up with a great recipe without using mayonnaise.

Here is the list of goods you'll need and the process: 

The goods:

One rotisserie chicken, 1/2 red onion or 2 green onions chopped, 1 garlic clove chopped, 1 regular carrot diced, 1 celery stick diced, 1/2 cucumber diced, about 10 - 20 grapes sliced in half, 1 apple diced, 1/4 cup grated cheese of your choice, I use parmesan or mizithra cheese, 1/4 cup plain greek yogurt, 1/3 cup buttermilk, 1 Tbls dijon mustard, oregano, salt, and pepper to taste.

The process:

In a big mixing bowl piece the white meat of the rotisserie chicken, (I save the dark meat for Joseph).  You'll have to use your hands and not be afraid to dig into that chicken and basically break it down; so wash up and get to work.  Add salt and pepper and oregano to the chicken, season to taste and mix well.  Next dice and chop all the veggies and add them to the bowl with the chicken, mix well.  In a seperate bowl add the greek yogurt, buttermilk, dijon mustard, and a little salt and pepper.  Blend the yogurt mixture well and then add it the chicken and veggies, mix everything together.  Lastly, dice and slice the apple and grapes and add them and the grated cheese into the chicken salad.  Mix everything together well, and taste, if the salad tastes a bit bland add more pepper.  (This makes enough for a family of five.)

There you have it!  The most delicious chicken salad you'll ever eat in my opinion!  Scoop a couple heaping spoon fulls on a bun or french bread and chow down!
