In the Kitchen at Eidolon: Fresh Green Salad

Joseph and I have set a goal to start making healthier choices about what we eat.  We don't want to be crazy about what we can and can't eat, we enjoy delicious food!  We work on the bench during graveyard hours and so our dinners are rather late at night.  Instead of eating a huge heavy dinner at night we've been eating huge green salads packed full of veggies; they are becoming a real treat for us.

Our salads are made with:  Baby spinach, celery, green onion, cucumber, tomatoes, carrots, romaine lettuce, sunflower seeds, mizithera cheese, and half of an avocado on the side. 

We're loving our salads and can't get enough!
