In the Kitchen at Eidolon: Oatmeal & Apple Cookies

I hate to boast, but I am in possession of a recipe for the most delicious cookies ever baked for mankind and a dog called Rascal.  I got the original recipe from mom years ago and through the years I've added to it; I'm going to share the recipe with you right now!     


The goods:

1 cup shortening or butter, 2 cups sugar, 4 eggs, 2 cups applesauce, 2 tsp baking soda, 1 tsp salt, 1 tsp cinnamon, 1 tsp cloves, 1 tsp nutmeg, 2 tsp vanilla, 4 cups flour, 4 cups oatmeal, 2 cups copped nuts (optional), 2 cups chocolate chips, one apple - diced. 

The process:

Using a KitchenAid mixer or an electric hand mixer, cream together room temperature butter with sugar, eggs, applesauce, and vanilla.  Next, add soda, salt cinnamon, cloves, nutmeg, flour, and oatmeal - blend every thing together well until the flour and oatmeal are mixed in.  Last, using a big spoon, stir in the chocolate chips and diced apple. 

Drop tablespoon-fulls of dough onto your cookie sheet and bake at 400 degrees for 10 - 12 minutes; the edges should be golden brown.  The recipe is actually doubled and makes a ton, so if you want to make a smaller batch just cut the measurements listed in half.  

There you have it!  These cookies are more like small oatmeal and apple cakes; I promise you, they will not disappoint.
