Joseph and I have been trying to eat healthy, but we want to incorporate eating what we love too. We love to cook together and we love to eat all kinds of food. We're not above eating at McDonalds, whipping up a batch of Mac & Cheese, or making a quick bowl of Ramen noodles either, but to live healthy you have to eat healthy, right? We refuse to become a slave to one kind of diet too; balance is our goal with anything we do in life, even eating.
Here is a healthy lunch I made for us today; it's low calorie, healthy, delicious, and filling.
This is a quick and easy meal to make, and the whole meal is 460 calories.
Here's what I did:
I split one ciabatta roll between Joseph and me. I spread one tablespoon of blue cheese dressing between both pieces of bread. Next I added baby spinach leaves, a fried egg over hard with the yolk broken, split an avocado between us, and grated 90 calories worth of Monterey Jack Cheese to sprinkle over the top between both halves. I put the two halves under the broiler for just a couple of minutes, enough to melt the cheese. Sprinkled salt, pepper, and a pinch of basil over the top, and there you have it! (I use Pam cooking spray when I make our eggs, rather than oil or butter. Pam cooking spray has zero calories.) One half is 460 calories.
If I wanted to cut the calories even more I still have room to do so by splitting just one egg between us and splitting just one half of an avocado between us. An avocado has more than twice the amount of calories than one egg! Because this was our meal, we both had one egg and a half of an avocado to help us stay full longer. If I were to split the egg and half an avocado between us, that would have made this meal 250 calories. Depending on how hungry we are when I'm cooking is how I decide how big or small I make a meal. Sometimes we feel like we want to eat often, so I'd make this a 250 calorie meal so we could have something else later if we wanted. Having freedom to eat as we like is really important; this is where the concept of balance comes in for us.
We each ate our open faced half of a sandwich with a tall glass of ice water and felt very full; in fact I couldn't finish my sandwich.
